Girlfriend losing her Job because she won't sign Insurance papers?

My girlfriend works for a place that does in-home care for people with mental disabilities. She's been with same company for 2 years. She has her own Insurance issued by the State. Her employer is suspending Everybody indefinitely who will not sign up for the insurance through Blue Cross. This suspension is until the paper is signed. She doesn't want to sign it because what she has now is Free from the state based on her income. If she signs it, it will cost $200 per month and only covers reg Dr. Visits. No dental or vision. What do you think of this? she recorded her boss suspending her and he also states in the recording that he absolutely will Not give her anything in writing of why she is being suspended. He's refusing to give her or any of her co-workers anything in writing. When she called Blue cross herself, they told her that it was her employer making the fuss about the insurance and not them. Her boss is claiming blue cross will not accept her insurance as a recognizable form of insurance.
